The flatiron steak is one of the best kept secrets in all of beefdom. With it's rich beefy flavor, perfectly grained tenderness, and natural juiciness, it hits all three marks of a high quality steak and at a better value than the more popular cuts. Our flat irons are cut by the expert butchers at Southern Foods from the shoulder of Choice grain-fed Angus beef, and aged to further develop tenderness and flavor. This steak takes marinade well, and is perfect for grilling. Sear the steak of medium-high heat, then move to a cooler portion of the grill to finish. These are best enjoyed at a medium-rare doneness, or around 135°F.
